A catalyzed reaction happens when enzyme contacts the substrate. More substrate will increase the chance of enzyme contact the substrate. Therefore increasing the substrate will increase the rate of reaction. But the efficiency will have a limit where the substrate is too saturated, which makes the enzyme contact the substrate almost immediately.

Let's look at the pH 3 column. The amount of product made by 1g of substrates(39), about twice the amount of product produced by 0.5g substrate(19). Keeping the temperature in ideal range will make the organism in ideal condition. If the temperature is not maintained, the strength of human will be weaker in the hot/cold environment, makes them harder to adapt to changes.
